Tawa Pulao

Street Foods are very popular not only among low income countries but even in cities with rich culture of fine dining. Some of the best meals are served on streets. It is quite common in Bangkok, Tokyo, Istanbul, Durban, Hong Kong, Paris and many more. Indian cities are no exception to it.

In today’s fast paced life, everyone crave for quick and cheap bites. Travel diaries are not complete without experiencing local street food. It is so popular that, according to a 2007 study from the Food and Agriculture Organization(fao), 2.5 billion people eat street food every day. That’s huge and I am sure number would become at least 1.5X till today.

Here I bring one of very common street food dish from India and that is Tawa Pulao. It is made on large flat, convex disc-shaped frying pan made from metal called “TAWA”  hence called as Tawa Pulao.

Basically, the recipe is made with leftover Pav Bhaji gravy mixed with cooked rice and roughly chopped vegetables. It is made on large Pav Bhaji pan where it is mixed roughly and quickly to make a spicy and tasty rice dish. But in this recipe post, I have shown how to make an easy homemade tawa pulao recipe with just Pav Bhaji masala in large kadayi without pav bhaji gravy. And the twist is what?? you will experience same taste. Isn’t it amazing? Let’s go

Ingredients


  • For Rice:
    • Basmati rice – 1 Cup
    • Salt – as per taste
    • Oil or ghee – 1 tbsp
    • Water to soak & boil
  • For Pulao:
    • Butter –  3 tbsp
    • Cabbage – 1/4 cup (finely chopped)
    • Onion – 1 medium size,(sliced)
    • Capsicum – 1 medium size,(chopped)
    • Peas – handful
    • Beans – 5-6 (chopped)
    • Tomatoes – 2 Medium size (finely chopped)
    • Potato – 1 Medium size (boiled & cut into cube)
    • Coriander (finely chopped)
    • Lemon Juice – 1 tbsp
    • Ginger Garlic paste – 1 tbsp
    • Pav Bhaji Masala – 3 tbsp
    • Kitchen King Masala – 1 tbsp
    • Kashmiri Red Chilli Powder – 1/2 tbsp (optional)
    • Turmeric – 1/4 tbsp
    • Salt – as per taste

Instructions


  • Wash and soak rice for 20 mins
  • After 20 mins, add it in pressure cooker along with salt, ghee and some water
  • Boil it till the point it gets 90% cooked and immediately drain the water and let it cool completely
  • Meanwhile, In a kadhayi, heat 3 tbsp butter and let it melt
  • Add sliced onions and ginger garlic paste. saute it well till raw smell of ginger garlic paste goes away and onions turn into light golden shade
  • Now, add half potion of chopped tomatoes and saute it till tomatoes becomes mushy
  • Keep the flame on medium flame and add below powder spices and mix it well
    • Turmeric powder
    • Kitchen king Masala
    • Pav Bhaji Masala
    • Kashmiri Chilli Powder
    • Salt (Remember, a small amount of salt was added while boiling rice as well)
  • After around 4-5 mins, you can observe oil released at the side of the kadhayi
  • Now, it is time to add remaining vegetables – capsicum, peas, beans and salt as per the taste
  • Stir-fry for 3 minutes or until vegetables are cooked slightly
  • Add remaining half portion of chopped tomatoes and boiled and cubed potato and mix it
  • Now add in cooked and drained rice, lemon juice. Mix it gently so that rice does not break
  • Keep the flame on low and let it get mixed for 2 mins and add coriander for garnishing

Pulao or Pilaf (US spelling), or Pilau (UK spelling) can be best served as side dish along with other delicacies, with Pav bhaji and it’s good enough to be served alone with dahi riata

Some Tips


  • While preparing Pulao, make sure your rice is completely cool down else the rice turns mushy and you may feel like having Khichdi instead of having Pulao
  • You can alternatively use leftover rice to hasten the process. Also, feel free to add a variety of vegetables to make it more nutritious
  • Lastly, i have added chilli powder for the extra spice, you can skip it or you can add it according to you spice preference. You can add kitchen king masala if you like bit of punjabi taste or it is completely optional. Note that pav bhaji masala has sufficient spice heat in it

Notes
