Punjabi Chole

Here I bring one of  world famous Punjabi Cuisine dish.. Punjabi Chole or Spicy Chickpea Masala Curry. Yeah, I know it’s mouth watering.

Preparation is the longest part in it. Unfortunately, when you crave for it, you can’t have it in next hour unless you order on Zomato. You have to plan for it on previous night or at least 8-10 hours prior. If you have patience or time in hand, I welcome you to the party. Let’s crackle.

Ingredients

  • Chole / Chickpea – 2 Cups
  • Onions – 1 Large
  • Tomato – 1 Large
  • Ginger Garlic Paste – 2 Teaspoon
  • Black Pepper – 5-6
  • Cardamom – 2-3
  • Bay leaves – 1
  • Cinnamon – 1 Small Stick
  • Red Chilly Powder – 2 Teaspoon/ as per taste
  • Ginger – 2 Inch
  • Chole Masala – 2 Teaspoon
  • Garam Masala – 1 Teaspoon
  • Turmeric Powder – 1/2 Teaspoon
  • Desi Ghee – 4 Teaspoon
  • Tea Bag
  • Salt – As per taste

Is it a long list? No, right? Because, you will easily find these Ingredients in your kitchen. Now the longest part

Preparation

  • Soak Chole at least for 8-10 hours or overnight.
  • Cut onions and tomatoes in Julienne style.

Method

  • Remove left over water from soak Chole
  • Pressure cook Chole in cooker with fresh water (4 cups) and add below ingredients
    • Cardamom
    • Cinnamon
    • Bay leaves and
    • Tea Bag – In case, tea bag is not available, take 2 teaspoon tea of regular use and tie it in small cotton cloth
  • After 7-8 whistles, turn off the gas and remove tea bag
  • Add 1 cup of fresh water and add below ingredients
    • Sliced Onion
    • Sliced Tomato
    • Red Chilly Powder
    • Turmeric Powder
    • Garam Masala
    • Chole Masala
    • Ginger Garlic Paste
  • Take small vessel and put ghee into it. Turn on the gas and let it heat for 20 sec
  • Pour hot and fragrant ghee on masalas which are added in cooker on top of chole, onion and tomatoes
  • Turn on the gas and let mixture cook on low flame for about 20 mins.
  • After around 20 mins, Pujabi chole are ready to serve

Ingredients
  

  • 2 cup Chole / Chickpea
  • 1 large Onion
  • 1 large Tomato
  • 2 tbsp Ginger Garlic Paste
  • 6 Black Pepper
  • 2 Cardamom
  • 1 Bay leaves
  • 1 Cinnamon
  • 2 tbsp Red Chilly Powder can be adjusted as per preference
  • 2 inch Ginger
  • 2 tbsp Chole Masala
  • 1 tbsp Garam Masala
  • 1/2 tbsp Turmeric Powder
  • 4 tbsp Desi Ghee
  • 1 Tea Bag
  • Salt as per taste

Instructions
 

  • Remove left over water from soaked Chole.
